Özet

Ensuring food safety is crucial, as it significantly affects both the environment and human health. Addressing food safety issues requires a collaborative effort from the government, industry, and consumers. The need for advanced, high-performance sensing technologies is becoming more evident to meet the increasing demand for rapid and accurate food safety monitoring. Recently, there has been growing interest in developing new sensors for food safety regulation. Carbon-based sensors have gained prominence due to their exceptional sensing, catalytic, and adsorption properties. This chapter provides a comprehensive overview of the latest advancements and applications of carbon-based electrochemical and optic sensors. It explores the use of these sensors for detecting toxins, including pesticides, mycotoxins, pathogens, and illegal food additives in food samples. Additionally, the chapter discusses potential future trends and current developments in carbon-based materials.
